Tomato and basil drink

  • ½ bunch basil
  • 1 kg ripe tomatoes
  • 1 bay leaf
  • 1 tablespoon tomato paste
  • Salt
  • Pepper from the grinder
  • 12 ice cubes


  1. Wash basil, shake dry, peel off leaves and put aside.
  2. Blanch tomatoes, drain, rinse with cold water and skin. Chop the tomatoes and bring to the boil in a large pot with bay leaves, basil and tomato paste. Cook over low heat for 10-20 minutes.
  3. Puree the tomato mixture with a blender, add some water if desired. Put everything through a sieve, season with salt and pepper and allow to cool.
  4. Distribute the ice cubes between 4 glasses, pour in the tomato drink and season with pepper. Garnish with basil on the side.
